Ingredients

  • 2 eggs
  • 1tbsp milk (can use formula, breast milk or any dairy free milk)
  • Dairy free spread
  • Grated cheese (optional)
  • Grated carrot (optional)
  • Grated courgette (optional)
  • Herbs and seasoning (optional)

Method

  1. Whisk the eggs together with the milk
  2. Lightly grease muffins tins with dairy free spread
  3. Fill muffin tins half way with egg mixture
  4. Stir in cheese, carrot, courgette and chosen herbs/seasoning
  5. Bake at 180c for 10-15 minutes until firm but springy
