Giorgio Locatelli

We were very privileged to be able to talk with renowned professional chef, Giorgio Locatelli who took time to tell us about his severely food allergic daughter. He talks openly about how as a family they failed to get an allergy diagnosis to her severe infant eczema and when she then developed food anaphylaxis the impact this had on them all.

As a chef he has had to radically adapt his thinking regarding catering for food allergic people and is now passionate about educating his staff about allergy. As they move on to other restaurants they then take this important knowledge with them.

His daughter's allergies have led him to find ways to produce meals that are free from the appropriate allergens yet are tasty and safe to eat.

Giorgio Locatelli then took time to demonstrate making a wheat free pasta then using this to prepare a ravioli dish. His enthusiasm is clear as he showed us how having to exclude certain allergenic ingredients does not mean that the food cannot still be tasty and high quality.
